I just bought a car and had the dealer run the VIN to print a Build Sheet (this is what you really want, I think) that lists the day of manufacture and all of the options and features installed (RPO codes.)
Ask a salesman the next time you're getting your car serviced, and I'm sure they'd be happy to print one for you.
Finding a safe used car is not difficult: there are many old models that offer decent protection and comfort compared to new cars. On the Vingurus blog, my friends and I chose the safest used cars for teens for ourselves.
